Tasting Notes

Soft and structured Cabernet Sauvignon with red fruit and gentle toast. Plums and cherries in the upfront are well integrated with hints of tobacco and mocha. It is an expressive Cabernet where the typicity of the variety stands out from the oak. In the mouth it has lively fruit, making this wine a fresh and juicy one, with soft and friendly tannins.

Excellent with savoury meat dishes such as Chile con carne and Creamy cheeses 

Bottle Information

Vinification: Grapes are gently crushed and the juice was chilled to 10 degrees C where it remained for 3 days under anaerobic conditions before selected yeast inoculation. Fermentation occurred at 28-29 degrees with pumping over regime of 3-4 times per day. The wine was left on its lees and skins for an additional 5 days in order to get more structure. After malolactic fermentation the wine was racked into French oak barrels and aged there for 10 months.
