Tasting Notes

Pleasant aromas of red cherry and raspberry lead this wine and are mirrored perfectly on the palate, alongside a mineral acidity. Subtle tannins round this out and bring the wine through to a fruity finish. 

Food Matching

The perfect accompaniment to pasta dishes with meat sauces. A classic beef ragu will be an ideal pairing, but alternatively, the fresh fruit of the wine will translate to alternative versions of the dish – try with duck for an interesting combination. 

Bottle Information

Vineyard: Grapes are grown in a vineyard situated across the hills of Gibellina, which lies between 100-300m above sea level. Soils here are calcareous, containing higher than average levels of organic matter and iron, which impart complexity and unique flavors to the wine. 

Vinification: Fermentation is conducted for 12-15 days at 24-30°C with daily pump-overs and racking. The wine is then aged in a combination of stainless steel tanks and French oak barriques for 2-4 months, before being bottled.
