He established Rob Hall Wines in 2014 with a focus on making wines that reflect the vineyards rather than being dominated by winemaking.\u003c\/p\u003e\n\n\u003cp\u003eThis Chardonnay is a blend of fruit from two Yarra Valley vineyards – the \u003cstrong\u003eFull Moon Vineyard\u003c\/strong\u003e in the cooler southern end of the valley and another vineyard south of Healesville.\u003c\/p\u003e\n\n\u003cp\u003eThe majority of the grapes are whole-bunch pressed, while a smaller portion receives around 24 hours of skin contact. Fermentation takes place naturally, with the wine predominantly matured in seasoned hogsheads and puncheons.\u003c\/p\u003e\n\n\u003cp\u003eThe clever bit is that Rob isn't relying on loads of new oak to give the Chardonnay its texture. Instead, much of that weight and complexity comes from \u003cstrong\u003eskin contact, grape solids and lees\u003c\/strong\u003e.
