These are some of the country's oldest vineyards, and this particular wine is made entirely from \u003cstrong\u003ePaís\u003c\/strong\u003e – the historic grape variety that has been growing in Chile for centuries.\u003c\/p\u003e\n\u003cp\u003eThe vines are estimated to be \u003cstrong\u003emore than 150 years old\u003c\/strong\u003e and are dry farmed, relying on natural rainfall rather than irrigation. The grapes are picked by hand before being destemmed and fermented slowly in open-top wooden tanks.\u003c\/p\u003e\n\u003cp\u003eAfter fermentation, the wine spends \u003cstrong\u003e18 months ageing in concrete eggs and old French oak barrels\u003c\/strong\u003e.
