Tasting Note: Ripe blackberries and a spicy finish for this Fitou wine, named for the terroir's four insistent winds, plus a warm, insulating scent of roasted nuts.

Vineyard: Vineyards grown on Limestone plateaux. 40 year old vines yield 30 hl/ha to make this wine.
Vinification: 2 types of vinification are used. Firstly Carbonic maceration for 20 days at a high temperature for the Carignan. Fermentation and maceration for 3 weeks at 28°C for the Grenache, Syrah and Mourvedre. Ageing is 12 months in stainless steel tanks, blending, then bottling within 18 months of the harvest. Stored in climate-controlled cellar.
