Tasting Note: Cabernet Franc from Patagonia, intense yet attractive, blending spice, honey and vanilla aromas with a mouthful of red berries and rich raspberry jam.
Food Matching: Red meats such as lamb, grilled baby goat and game. Risotto and seafood also make a very original pairing.
Vineyard: The first winery in Patagonia to be certified as sustainable, Humberto Canale still operate today with the same values as when Guillermo Barzi's uncle planted the vines in 1914. Providing work and housing for local residents they pride themselves on to this day being an authentic family owned winery with real family values. The cooler climate of Pategonia allows fruit to ripen slowly and retain an acidity not normally associated with the new world and one that yields wines of superb complexity and elegance. The old vineyards are located in General Roca, Alto Valle del Rio Negro in Patagoni. Vines are generally planted on well drained limestone soil. With the desert warm climate, the vineyards receive intense, dry cooling winds from the West that contribute to the health of the bunches. The berries are then hand picked in small containers and trasported to the winery, just 1 kilomentre away.
Vinification: Hand picked grapes are fermented in stainless steel tanks and aged in new French and American oak casks for 12 months, followed by bottling and further bottle ageing for 6 months before release.
