Tasting Note: Balanced, berry-filled red from Cahors, a juicy mouthful of blackcurrant and raspberry and a gently perfumed bouquet of violets, mocha and peppermint.
Food Matching: By the glass or with a plate of charcuteries, with knuckle-end lamb cooked with herbs. Pasta with meat sauce.
Vineyard: A place bathed in sunshine from the start of the day. Calcareous - red clay soils. The vineyards are located on the Plateau in Cahors AOC at an 300m altitude.
Vinification: After several years of research, we have developed a winemaking process adapted to guarantee the most sincere expression of Malbec. Although kept secret by the cellar master, Vigouroux will reveal some elements. Destemmed, lightly crushed, low temperature fermentation in thermo-regulated stainless steel tanks and gentle extraction to preserve the fruit.
