Rich, dry red from the very south of France, near the Spanish border, perfumed with redcurrants and black cherries plus an appetising waft of herbs and vanilla.
Food Matching: Oriental and Mediterranean food, osso-buco , thyme flavored lamb.
Vineyard: Harvested by hand. Grapes are first sorted and destemmed before being put in stainless steel tanks where fermentation is temperature controlled (23-30°C). Grape varieties are often co-fermented to develop in complexity.This is also a reflection of our mosaic of plots.
Vinification: Selection of plots on high altitude terroirs, hard to work, with low yields and advanced maturity, where vine grows directly on the rock. Mediterranean climate - warm and dry, very windy with a maritime influence from the Cove of Paulilles.
