Tasting Note: Fragrant, fresh white from Sicily, floral on the nose, with refreshing flavours of lemon and lime.
Food Matching: Flavoursome enough to hold its own against heavier dishes like pasta Carbonara, mushroom risotto or smoked white fish.
Vineyard: The winery utilises the Guyot pruning system in this vineyard, which is grown on relatively deep, alluvial soil of medium texture. All harvesting here is done by hand between August and September.
Vinification: Grapes are destemmed and then softly pressed in the pneumatic press. Fermentation takes place in stainless steel tanks for between 10-15 days at a controlled temperature of 18-20 ° C.
