Vineyard: Michael Noack's vineyard is just outside of the township of Springton in the southern Eden Valley. The Riesling vines were planted in 1973 on an ideal east-facing aspect that benefits from the prevailing breeze that helps to keep this vineyard fresh and disease free. The vineyard is planted in low-nutrient well-draining soils largely composed of quartz gravel. Vineyard GPS coordinates: 34°42'06.5"S 139°05'03.4"E
Vinification: Machine harvested for a few hours of intentional skin contact to build phenolic body. Cold fermented in a temperature controlled inox fermenter using a combination of indiginous and selected yeasts to develop and protect delicate aromas. As a stylistic choice, no fining agents are used throughout the winemaking process and only minimal SO2 is added prior to bottling.
