Tasting Note: A deep ruby red colour with purple tints characterize this rich, spicy, vanilla flavoured wine. On the palate this first-class wine is rich and full bodied with rounded velvety flavours.
Food Matching: Stewed fish, roast or grilled beef, hard cheeses.
Vineyard: Salento is renowned for its Mediterranean climate with its prevailing winds, cool nights, very low rainfall and for the moderating influence of the sea. Due to the winds there are also extreme differences between day and night temperatures which result in a slow ripening of the grapes, helping them develop exceptional aroma and flavour compounds.
Vinification: The destemmed grapes are macerated in stainless steel tanks for several days. After malolactic fermentation, the wine is matured in small oak barrels.
