Chablis, Vieilles Vignes Domaine de Vauroux

Tasting Note: Selected from the domain's oldest vines this Chablis is deep lemon yellow with a wonderfully developed nose of stewed apples and cream. The wine also has a creamy texture on the palate which is underscored by a typical minerally acidity, and a long clean finish.
Food Matching: The extra development and concentration of this wine make is an excellent partner to smoked fish dishes and also to creamy seafood dishes and even veal in creamy sauces.
Vineyard: All the grapes for this wine arehandpicked from the Domaine oldest vines, some as old as 40.
Vinification: They are then carefully selected before being gently pressed. DomaineVauroux uses some skin contact before fermentation to add more aromatic character. The juice is then fermented in stainless steeltemperature-controlled tanks at approx. 18 degrees. Olivier Tricon the winemaker is not an advocate of wood ageing but allows the wine an extended stay in tank before bottling.
