14% ABV
Nose - Medium intense aroma of dark cherries, dried oregano, and slight licorice. Almost cured meat with its fruit.
Palate - Rich but soft tannins, cherries carry on from the nose with more intense red plums and dark fruits showing their age gracefully.
Finish - Medium long finish with this wonderful bitterness which pairs gloriously with the fruit that lingers.
Needs to stretch its legs before drinking so allow time to open and decant if possible.
Grape varieties - 70% Grenache, 10% Mourvédre, 10% Syrah & 10% Cinsault
Harvest - Hand-picked and selected following strict ripeness checks.
Vinification - Destalking, no yeast added. Fermentation in vats for 15 days with twice daily "pigeages" which is punching down of the skins to help break them down.
