Tasting Note: Pale yellow robe, green highlight. Complex nose, notes of white ﬂowers, peaches, and citrus. Aeration reveals all the richness of this wine. Well-balanced, lots of volumes brought by the Grenache. The Sauvignon provides acidity and freshness on the ﬁnish.
Food Matching: Veal escalope à la crème, chicken brochette with pineapple and cumin, grilled salmon in a white wine sauce
Vineyard: Maceration on the skins for a few hours. Racking. Addition of yeast. Alcoholic fermentation at controlled temperatures (16 – 18ºC). Malolactic fermentation for a part. Aged on ﬁne lees for 6 months.
Vinification: Mediterranean climate, the vineyards which we select come from MasJaneil and Roussillon. Vineyard Terroir of Granite moraine with a vine density of 3500 hl/ha. The average age of the vines 20 - 25 years.Yield : 50 - 60 hl/ha.
