After extensive sampling and evaluation across  50,000 casks maturing on-site, Billy hand-picked just three vintage Pedro Ximénez puncheons to create this ultra-limited release. Our heather honey-forward distillate stands up well to ageing in rich Sherry oak, creating a rich, luxurious malt. The wood has imparted layers of sweetness, offering a palate with decadent chocolate truffles and dark cherries steeped in maraschino syrup. Exceptionally smooth, this elegant expression is one to be savoured.

Presented at a natural cask strength of 51.1%, without added colouring or chill-filtration for the purest drinking experience.

Intense Mahogany.

Nose

Waves of clementine zest, raisins, and honeycomb, with cocoa, fruit cake, and caramelised brown sugar.

Taste

Bursts of baking spices, rich chocolate, and heather honey, followed by treacle, orchard fruits, and black cherries, with sweetened espresso on the finish.
