Delicately fragrant sparkling wine from the Loire, a blend of crystallized lemon, yellow peach and crème pâtissière, with a whiff of mint and a long aftertaste of dried fruit.
Vineyard: From vines located in south Saumur from both 'tuffeau' chalk and shale soils. All grapes are harvested by hand.
Vinification: Selection of the plots according to the maturity. Gentle pressing and cool fermentation (18°C) ensure that all the aromas are preserved. The best juice is selected from the first pressing. Second fermentation in bottle according to the Méthode Traditionnelle. Ageing: The bottles are stored horizontally on wooden laths in our tufa cellars for a minimum of 48 months before disgorging, to develop an incomparable fine bead.
Excellent aperitif. Enjoy chilled (8°C) it is a perfect accompaniment: white fishes, poultries, desserts (rhubarb tart, poached pears).
