Leyda Sauvignon Blanc Reserva

Tasting Note: Intense and fruity on the nose with citrus aromas of grapefruit and mandarin. Bright and fresh on the palate with citrus and apple character. Light body and a lingering grapefruit aftertaste.
Food Matching: Excellent with asparagus
Vineyard: Coastal views from steep granite rolling hills with the brisk Humboldt current keeping the fruit fresh. This vineyard has the recipe for creating fresh fruit with lifted aromatics and bracing acidity.
Vinification: The grapes were hand-harvested during the mornings of the second and third week of March, in different picking times at 22 to 23,5 º brix. They were carefully transported to the winery. A percentage of the harvest was cold macerated in the pneumatic press for 12 hours in order to enhance aromas and flavours. After pressing, the juice was chilled down to 8 º C and then gravity clarified. The wine was fermented 100% in stainless steel tanks at low temperatures (12-13°C, finishing at 16°C) for 20-22 days until dryness. The wine was left on its lees for 5 months to get roundness and improve the texture in the palate. The final blend is 65 % Clon Davis 1, 20% Clon 242, and 15% Clon 107.
