Tasting Note: Vibrant purple sparkling wine from South Australia, a melding of ripe plum and black olive, with a whiff of cedar, another of mint, and a third of Christmas spice.
Food Matching: The wine goes well with rich spicy dishes, a curry that has plenty of heat, or just on its own.
Vineyard: This is a non-vintage sparkling wine, indicating specific parcels are selected from a number of vintages to create a consistency in quality from one cuvee to the next.
Vinification: The base wine is prepared using the time-honoured techniques of open fermenting, foot treading, and basket pressing. The addition of liqueur tirage instigates secondary fermentation and creates bubbles with a unique vibrant purple colour.
