We’ve completely and utterly fallen in love with Sabro at Polly’s HQ – since we first used it last year we’ve become completely enamoured with just how intense this incredible varietal is, and how little of it we need to use to bring all those coconut, lime, and ripe tangerine notes to the fore. A reserved 5kg dry hop addition pairs up with a hefty 20kg of Citra to meld perfectly with the old school citrus notes our in-house favourite old school stalwart brings to the table.
An unexpected bonus of using Sabro with our bespoke LA3 yeast strain means that the opaqueness of this beer is off the chart; looking and tasting more like a breakfast juice than a beer. Thick, juicy, pulpy, and straight up delicious; this might be the most bombastic pale ale we’ve ever brewed.
