La Carta Salice Salentino Riserva, Francesco Candido
Italy – 2016
Tasting Note: This wine is a delightful ruby colour which develops hints of orange on the rim with maturity. The nose has an ethereal bouquet and distinctive aromas of cocoa and leather. On the palate, it has a pleasant enveloping structure with the typical rich and warm black fruit notes well combined with the typical French oak aromas.
Food Matching: Pasta dishes with richly flavoured sauces, red and white roast meats and poultry.
Vineyard: Salento is renowned for its Mediterranean climate with its prevailing winds, cool nights, very low rainfall and for the moderating influence of the sea. Due to the winds there are also extreme differences between day and night temperatures which result in a slow ripening of the grapes, helping them develop exceptional aroma and flavour compounds.
Vinification: The must is fermented on the skins at a controlled temperature for about five days. After alcoholic and malolactic fermentation have taken place in stainless steel tanks, the wine is matured in large oak casks.
Grapes: Negroamaro 95%; Malvasia Nera 5%
