The sake is filtered from the solids, in cheaper versions, some alcohol is used to extract extra flavour. The young sake is pasteurised and then matured for up to one year, it is diluted to about 15% abv before bottling. In Shiraume, the mild flavour of brewed sake nurtured to perfection blends harmoniously with the fruity flavour of ume plums. There is no sharp tang of spirit alcohol to mar the finish. Shiraume is a luxury plum liqueur, made by preserving plums in the finest Japanese sake.

Tasting notes

Dry fruit, date, cherry and plum. Sweet with rich prune, and almond flavours. Refreshing dry finish.

Food Matching: Lovely on its own with ice at the end of a meal or with some plum and chocolate pudding.

Production Method: Sake is not a wine, as there is no fruit sugar or fructose involved. It is really a strong beer made from rice. Polished rice is soaked, then steam cooked to release starch. As rice lacks the necessary amylase to convert starch to sugar a complex process involving multiple parallel fermentations has evolved: A cultivated mould is used to prepare the rice starch, brewing yeasts follow, and as the yeast population increases, more rice is added until the desired volume is met, then water is added for the main fermentation during which the sugars are converted to produce a beer with an ABV up to 20%.
