Tasting Note: Malbec from Chile's Bio-Bio Valley, with a wild, forestry aroma and flavours of black fruit, wild cherry and an indigenous berry called Maquí.
Food Matching: Risotto ai funghi , full creamy pasta.
Vineyard: Extremely Old, more than 150 years old, dry farmed-vineyards (without irrigation) in recently rediscovered “San Rosendo” Valley in Biobio Region. Ancestry viticulture, low intervention.
Vinification: Manual destemming (by 'zaranda') softly crushed by hands. Fermented in open tanks and macerated for 25 days before pressed in static press. Stay in French oak for 6 months. Light filtered and bottled
