Chile – 2019
Tasting Note: Red ruby color with light purple hues, intense aroma of blackberry and plum. Medium body, soft tannins, and a round finish.
Food Matching: Ideal to pair with beef, lamb, pork, duck, cheeses, pasta, and pizza.
Vineyard: Hand harvested from fruit grown in the Casablanca Valley.
Vinification: After harvest, grapes are kept at low temperatures (<15°C) to keep the fruits in optimal conditions. Fermentation occurs adding selected yeast at controlled temperatures (<28°C) with soft pump-overs (2-3 times). After fermenting, wine has wood contact for 3 months.
