It's a pretty special place to grow Cabernet Sauvignon, with the vineyards exposed to cooling winds coming in from the Atlantic Ocean.\u003c\/p\u003e\n\u003cp\u003eThe \u003cstrong\u003eCircumstance Cabernet Sauvignon\u003c\/strong\u003e comes from a single, windswept vineyard block sitting around 270–300 metres above sea level and just two miles from the Atlantic.\u003c\/p\u003e\n\u003cp\u003eThat combination of altitude, sunshine and cooling coastal influence helps the grapes ripen slowly, producing Cabernet with plenty of concentration but also the freshness and acidity needed to keep everything in balance.\u003c\/p\u003e\n\u003cp\u003eYields are tiny at around four tonnes per hectare. The grapes are \u003cstrong\u003epicked by hand and even transported back to the cellar by horse\u003c\/strong\u003e before being carefully sorted.\u003c\/p\u003e\n\u003cp\u003eFermentation happens naturally with wild yeasts in large open-top wooden fermenters.
