This delivers zesty gooseberry, capsicum, and lime flavours with a hint of passionfruit. While it remains a distinctively New Zealand sauvignon blanc the palate is full of great weight and length.

Vineyard: Our 31-hectare vineyard located on ancient free-draining soils has 94,000 vines which when in full production will produce over 15,000 cases per year. Our seven-year inter-row crop rotation maintains healthy soils full of life and biodiversity. Every year, one row of seven will be sowed with a variety of plants and beneficial flowers. These flowers, such as buckwheat, lupins, and phacelia provide crucial protection to the vineyard attracting beneficial insects that will kill off unwanted pests that can destroy the fruit and vines. A good example of this is the Tasmanian Wasp which preys on the Leaf roller Caterpillar – a pest that causes harmful botrytis, a type of rot in the grape bunches.
Vinification: Lightly crushed and pumped straight to press where it is gently pressed and the juice is taken to the tank. The juice than cold settled for 24 hours. The juice is then racked off the heavy lees and moved to another tank where it is warmed and fermented under temperature control. After finishing ferment, the wine sits on its lees for a period of time. A proportion of the blend is also fermented in old barrels. This wine was held in fermenter for 4 months post-ferment sitting on its gross lees. This was then fined, filtered, and bottled.
