Named for a pretty, purple Sicilian flower, this is a lovely, purple wine, its aromas of ripe plums, wild blackberries, and jasmine surpassed in the mouth by chocolate, forest floor, and black truffle.

Perfect for matching with grilled meat with its affinity for smokey tones and its natural sweetness which goes with any sauce.

Vinification

Plumbago – named after the beautiful purple wild flower that grows in the woods surrounding the farmhouse and vineyards of Ulmo – is a single-variety Nero d’Avola. It is produced from the old vineyard at Lake Arancio which gives us this soft fruity version of this great Sicilian grape variety. Rounded tannins and perfectly judged wood makes it an immediately pleasurable wine. Ideal for Mediterranean cooking based on vegetables and all types of meat. Vinification: "Vinification: after destalking and pressing, the grapes ferment in stainless steel vats and remain on the skins for 14 days at 25⁰C with repeated mixing; at the end of the period racking by soft pressing. The wine thus obtained undergoes malolactic fermentation in stainless steel, in January it is transferred to wooden barrels for 10 months. Maturation: barriques and tonneaux used 3 and 4 times. "

The nose is heady and herbaceous. The wine has significant palate weight, almost New World in style, with ripe passionfruit complemented by that herbaceous edge again. Very rounded with a rich texture and long finish.

Vinification

Hand-picked, carefully selected estate fruit from the best parcels of old vines, 30-35 years old, grown on gentle south-facing slopes with sandy gravel soils. 20-25% of the harvest will be macerated on the skins, depending on the characteristics of the vintage. This is followed a slow fermentation at 18°C for three weeks in stainless steel vats. There is no malolactic fermentation. Wines are matured on their fine lees until bottling in the following spring.

After pneumatic pressing and after racking at low temperature, the wine ferments in stainless steel tanks at temperatures ranging from 18°C to 20°C. No malolactique fermentation is used. The wine is then matured on its fine lees until bottling in June.

Vinification

Grapes are sourced from the oldest vines on Uggiano's Colli Fiorentini and Classico properties. After crushing, the grapes are fermented in stainless steel with selected yeasts. The must is pumped over the skins twice a day. After 10-15 days the wine is racked to French oak barriques (Allier, Nevers and Vosges) where it matures for around 12 months. Then it spends a further 6-8 months ageing in large oak casks (30-60 hl), with at least 12 months refinement in bottle before release.

A pretty, translucent ruby colour with earthy, strawberry fruit and a light pepperyness on the nose. Mouthwatering acidity balances the moderate gentle, ripe tannins and elegant, pure, somewhat savoury red fruit.

Food Matching

Traditionally Coq au Vin, yet it goes equally well with roast chicken, or young game birds. For vegetarians, try matching youthful Bourgogne Rouge with pasta bakes or ratatouille.

Vinification

The grapes come into the winery with stalks as the Vallets believe that destalked wines lose their colour too quickly. The first 10cm of each barrel is filled with grapes which are crushed by foot, the barrel is then topped up with whole bunches and fermentation starts naturally after 2-3 days. Since yeasts are an expression of the individual vintage and vineyard no artificial yeasts are used. 3-4 times a day the pulp is trodden by foot to further extract colour and flavour. The wines are left in open top fermenters until the cap sinks then decanted into 20-30% well toasted new oak (a small percentage compared to most). After 15-20 months the wine is racked, blended and lightly fined with bentonite. Wines are not filtered but checked by candlelight, then bottled directly from barrel by hand on a cask by cask basis.

The wine shows reserved aromas of ripe citrus peel, stone fruit, lanolin, and flint. The palate is ripe, creamy and textural with nectarine and passionfruit flavours and complexity from savoury lees characters. Mouthwatering acidity supports the wine to give it definition, length, and flavour.

Smoked or grilled fish, salmon rillette and goat cheeses, creamy pasta and pesto dishes.

Vinification

The Sound of White vineyard on Catalina Sounds Waihopai estate has silty, clay and loam soils which give structure and density. Low yields are maintained helping achieve clean, ripe, concentrated flavours in the fruit. The fruit is hand harvested and gently whole cluster pressed. After 24 hours at an ambient temperature the very cloudy juice is run to 500 L French oak barrels where a completely wild, indigenous fermentation takes place. This slow ferment over several months is monitored and tasted regularly, without stirring or disturbing. The barrels are racked and the wine stabilised and lightly filtered, before being bottled.

Concentrated aromas of black fruit and spice lifted by notes of violet and thyme. The palate is serious and complex, with damson and black berry fruit balanced by ripe, rounded tannins, crisp acidity and a long and mineral finish

A big bit of roast beef

Vinification

The Garnacha vines are 70-100 years old, cultivated at 1,000-1,100 metres altitude near the villages of Acered and Alarba in Aragon, in slate and quartzite soils. Found amongst mountain herbs, almond and olive trees - the bush vines are dry-grown at this extreme altitude, where annual rainfall is very low (200-300mm).All the fruit is rigorously selected and, as such, these old vines yield less than 1.5kg of fruit per vine. After picking the grapes are held for a minimum of 48hrs in a cool room. Following a selection of the bunches the grapes are crushed into tanks, where they are held at 8°C to cold soak for up to 10 days.The temperature is then allowed to rise to bring on wild fermentation, and the tanks are plunged for gentle extraction. A couple of tanks were allowed an extended maceration to add weight and complexity to the blend. 40% of the wine was then aged in old, used, French oak barrels (500-650 litre) with low to medium toast. The component parts were blended, with some lees stirring, and bottled with a light filtration and no fining.

Aromas of dark fruits and light spice. Plum and bramble fruit balanced by toasty characters on the structured palate. The tannins are nicely woven in, there is a chunky texture but good fruit intesity which balances this wine out nicely.

Enjoy with roast lamb or beef dishes and robust enough to partner quite spicy food.

Vinification

Made exclusively from low-yielding, old vine Bobal fruit grown in the area known as ‘Medio Dia’ - where the soil is chalk/clay with little organic content. This, together with long hours of sunshine, and large variations between day and night temperatures, result in very low, yet high quality, yields. The grapes are destemmed and gently pressed followed by a long maceration at controlled temperature. Malolactic fermentation takes place, and then the wine is aged in new French ‘Allier’ barrels for eight months.

We partially block the malolactic fermentation in one of the component parts to retain a level of bright acidity needed to create balance and poise in the final blend. Once selected, the blend is aged for two months prior to bottling to allow for full integration of the elements to create a harmonious whole. Blending in this way, using the same variety from different plots and adjusting the vinification of each parcel allows us to create a hand-crafted, personalised wine with greater complexity and finesse than would be possible working with just one element.

Aromatically this has a really inviting and vibrant fresh fruit expression of dark cherries, red plums, baking spices, with gently floral notes. The palate focuses on fruit but with enough tannin to give structure, a good length finish, and gentle oaky notes.

Enjoy with richly-flavoured pasta dishes such as lasagna or spaghetti bolognese, or ribs and burgers.

Vinification

The Tinta del Pais (Tempranillo) vines are over 15yrs of age, and grow in a number of sites near Fuentecén. After a first selection of grapes in the vineyard, they undergo a pre-fermentation maceration for 3 days. Alcoholic fermenation takes over 14 days at 21- 23ºC. Malolactic fermentation is induced duing the latter stage of the alcoholic fermentation. The wine then matures for 7 months in new oak - 40% American, and 60% French with varying levels of toast.

This offers an approachable entry to CA Cabernet Sauvignon; juicy and ripe with plump tannins, and a chocolate edges from American oak ageing.

Vinification

This wine is sourced from vineyards in the northern part of California’s Central Valley. The region around Lodi and Manteca enjoys significant influence from San Joaquin and Sacramento river deltas, which act as a natural cooling system to the often-searing heat. The effect is to provide freshness to the ripe, fruit charged Cabernet grapes. Individual Cabernet blocks are vinified separately and then blended to produce a wine which reflects the right balance between fruit and structure. The wine then spends 6 months in oak to provide a broad frame for this rich wine.

A warm, spicy nose with fruit cake and ripe plum aromas with smokey notes. The palate is richly flavoured and structured with concentrated black fruit and spicy, white pepper characters.

Great with barbecued red meats, paella, or spicy sausages.

Vinification

The red grapes produced and harvested for the Paarl Heights Shiraz are from Malmesbury shale. This is a dense soil type with clay that has a good water retention ability so it's very suitable for later ripening varieties. The soil drains very easily, as excess water has unlimited drainage opportunities between the 'bedding planes' or layers of shale. The vines are never in a situation where they can sit back and enjoy life as they are forced to push their roots down in search of water. The wine is produced from only free-run juice and fermented on the skins in stainless steel tanks. The wine is left on the lees for an extended period for greater palate weight and mouthfeel.

Vinification

The Smalltown block was purchased in 2016, 40 hectares of 28 year old Shiraz and Cabernet in the premium Ebenezer District of the Barossa Valley. This wine was aged in new and tertiary French oak for 24 months. The oak lends a subtle texture and structure to the fruit leaving the palate fresh so this is a bright, varietal Cab that wears its oak lightly as a structural veil rather than anything more monstrous.

A compelling, dark and rich chocolately beast. A blend unique to Boutinot, this is a classic Barossa Shiraz with intense savoury flavours of thick blackberry compote, black pepper and typical iron-rich beefy flavours. Not a hint of jam here, no sweetness, this is serious Shiraz for grown-ups with balanced acidity, a touch of cocao powder in the finish and tremendous length.

As the name implies, black is the key - anything chargrilled would be superb here, so think griddle pans and barbecues!

Vinification

This Shiraz is sourced from the finest available vineyard sites across the premium Northern Barossa Valley including for the most part Greenock, Western Ridge and Ebenezer. Aged 11 months in a variety of oaks, all American and French, new and old, around 35% new. All oaks were AP John, Barossa coopered. As usual withSmalltown, it was fermented in open fermenters. They don’t set the blades too close together during crushing so a fair bit of whole berry in the ferment which gives the wine generous fruit and soft tannins.

The flavour profile of this sits somewhere in between the Chablis and Petit Chablis from Domaine de la Motte. It has a restrained savoury, citrus and herbal nose followed by greater intensity on the palate. Cooked lemons, green apples and a stoney minerality are complemented by a nice citrus acidity to the end with a lovely clean finish.

Food Matching

Anything that calls for a clean, crisp Chablis.

Vinification

Grown on Kimmeridgian soils, on south and south-eastern facing slopes in the commune of Beine. This 1.5 hectare plot of vines with an average age of 40 years old only produces about 9000 bottles per year. After traditional vinification and fermentation at 18 degrees, the wine is aged for 9 months with 66% in steel tanks and 33% in 600l oak vessels.

A warm, inviting, richly fruity nose, with aromas of fresh morello cherry, ripe plum and hints of dried fruits. The palate is similarly full-flavoured with concentrated, crunchy black cherry, brown spice and vanilla notes and a hint of liquorice. The long finish has the classic bitter cherry fruit finish typical of ripasso.

Food Matching

Try with lamb shank, calf's liver or a mushroom pasta dish. Hard cheeses would also suit.

Vinification

The grapes are cultivated on traditional trellised vines planted in marl soil at Montresor's 'Capitel della Crosara' vineyard on the hills of Negrar within the Classico zone. Grapes are picked by hand in October. Made by the Ripasso (literally 'repassed') method, which involves adding the unpressed skins from the dried grapes which were used to make an Amarone to a young Valpolicella wine. This helps to add extra flavour and alcohol to the wine (causing it to start re-fermenting) and gradually the luscious flavours of Amarone are imparted to the wine. After this the wine is aged for 12 months in French and American oak casks along with some small barriques.

Vines are trained on a low Guyot trellis at 4-5,000 vines/ha. The grapes were hand-harvested, de-stemmed and then crushed to small fermenters, for 12 days, with daily pumping-over. The wine was drained off at dryness, and the skins transferred to a small press. After pressing the wine was settled for two days, and then racked to stainless steel tanks for malolactic fermentation. After three years maturation in 50hl Slavonian oak casks it was racked from oak and gently fined.

Drinks very happily on its own but really comes into its own with BBQ'd meats or anything with a garlic and herb crust.

Vinification

20% of the blend is our WIT skin ferment Chenin, raised in Clayver ceramic egg, the other 80% is made up of 2 pickings of Eenzaamheid Chenin Blanc, one early to retain freshness and crisp acidity and one a little later to provide some broader brush strokes. The Eenzaamheid portion is aged in used 600l French oak for 9 months.

Vinification

Optimal ripe grapes are essential for a good Pinot Noir. The full aromatic potential has already been developed, but the sugar content should be relatively low in order to preserve the variety's elegant style. For that, a part of the crop is harvested quite early and ferments at low temperatures exalting fruity aromas. The other part, fully ripe, undergoes a traditional, long maceration. About one-third ages in French oak barrels for several months adding complexity to the wine.

A warm, inviting, richly fruity nose, with aromas of fresh morello cherry, ripe plum and hints of dried fruits. The palate is similarly full-flavoured with concentrated, crunchy black cherry, brown spice and vanilla notes and a hint of liquorice. The long finish has the classic bitter cherry fruit finish typical of ripasso.

Food Matching

Try with lamb shank, calf's liver or a mushroom pasta dish. Hard cheeses would also suit.

Vinification

The grapes are cultivated on traditional trellised vines planted in marl soil at Montresor's 'Capitel della Crosara' vineyard on the hills of Negrar within the Classico zone. Grapes are picked by hand in October. Made by the Ripasso (literally 'repassed') method, which involves adding the unpressed skins from the dried grapes which were used to make an Amarone to a young Valpolicella wine. This helps to add extra flavour and alcohol to the wine (causing it to start re-fermenting) and gradually the luscious flavours of Amarone are imparted to the wine. After this the wine is aged for 12 months in French and American oak casks along with some small barriques.

Vinification

Vines are trained on a low Guyot trellis at 4-5,000 vines/ha. The grapes were hand-harvested, de-stemmed and then crushed to small fermenters, for 12 days, with daily pumping-over. The wine was drained off at dryness, and the skins transferred to a small press. After pressing the wine was settled for two days, and then racked to stainless steel tanks for malolactic fermentation. After three years maturation in 50hl Slavonian oak casks it was racked from oak and gently fined.

Great example of Blanc de Blancs from the Côte des Blancs in the apéritif style. Speaks of the character of Cuis the heart and soul of Gimonnet’s vineyard holdings.

The Gimonnet family can be traced back to 1750 growing vines around the village of Cuis, south of Epernay, but it was between the wars that Pierre Gimonnet set up the winery that allowed him to become a grower-producer, specialising in Blanc de Blancs. Pierre Gimonnet was succeeded by his son Michel. Michel’s understanding of terroir led him to acquire parcels beyond Cuis and into neighbouring Cramant and Chouilly. Olivier and Didier worked with their father Michel for a decade until his retirement in 1996 (he died in 2008), and have continued, and improved on, his work for over 20 years. His sons have continued this principle, expanding into Oger in 2005 and as far south as Vertus in 2008. The House now has 40 separate parcels across 28 hectares – 16ha of Premier Cru and 12ha of Grand Cru – all in the Côte des Blancs. At harvest time, grapes are handpicked, traditionally pressed and then vinified in small batches, parcel by parcel, in 25 to 125 hectalitre tanks to create the Gimonnet champagne. Today they produce 250,000 bottles. The Gimonnet house style is freshness and purity we are currently on vintage base year 2021 known as blend or assemblage 234 which relates to the 234th time a NV blend has been created from the founding of the business. Each year, Pierre Gimonnet use all the wines they need to reproduce their House Style in their signature blend, Cuis 1er Cru. This classic Non-Vintage is about liveliness, lightness and finesse: all the purity of the Grands Chardonnay from the Côte des Blancs. Annual production is 129,000 bottles.

Located in the heart of the southern Rhône valley, to the east of Orange, its 1,087ha of vineyards lie between the two Rhône tributaries of Ayges and Ouvèze, rising from the alluvial valley floor to the hillside slopes of La Monté de Ventabren. On the various soils of this Mistral buffeted hill are to be found the majority of Domaine Boutinot’s vineyards with La Pauline and Les Six Terrasses, two of the appellation’s best plots, nudging the summit. Both are broad terraces of ‘argilo-calcaire’ - heat-retaining limestone pebbles over water-retentive clay. The pebbles help maintain diurnal temperature variances and aid ripening, while the roots find water in the clay to sustain the vines during the summer growing season. As with all Domaine Boutinot’s plots, they are managed by minimal intervention and both vineyards benefit from the all-day sun and the cleansing Mistral winds. Planted mostly in 1969, the old bush vine Grenache Noir ripens slowly and evenly to produce low yields of deeply concentrated grapes, all harvested by hand into small baskets and destined to form a significant part of the blend of La Côte Sauvage. Vinification is traditional, in open-topped tronconique (6,000l oak vats) and using only the natural yeasts present on the grapes, with long cuvaison, gentle remontage and manual pigeage. Aromatic fruit with the tiniest hint of sandalwood smoke on the nose. The palate has lovely weight with ripe, fleshy cooked lemons, a touch of stone fruit and a good mineral backbone. Far superior than the name "Petit" might suggest.

This Petit Chablis is a light fruity wine that marries perfectly with oysters and all shellfish.

Vinification

Vineyards are in the Hautes Côtes, at the top of the slopes just above Domaine de la Motte's Chablis classified plots and so achieve good ripeness. The soil is Portlandian, which is less chalky than Kimmeridgian, and typically produces wines which are less mineral and more fruity, well suited to earlier drinking. Having said that, Motte’s wine has real finesse with good fruit character – very much their house style. Cool-fermented in stainless steel, malolactic fermentation is also in stainless steel and the wine is unoaked.

Pale yellow sparkling wine, with an extremely fresh, austere, elegant and very complex nose. Great mineral character, with soft notes of yeast and bread. In the mouth it has a firm and balanced acidity, a vertical wine with very fine, persistent and very elegant bubbles.

Vinification

Produced with Chardonnay (60%) and Pinot Noir (40) grapes, coming from the famous Talinay vineyard, a unique terroir where calcareous soils and the cold coastal climate of Limarí combine. The grapes were hand-harvested into small, 20-kg bins and immediately transported to the winery. There they were whole-cluster pressed very slowly and gently to avoid extracting phenols, fruity aromas, and colour in the case of the Pinot Noir. Next, the juice was settled for 18 hours to remove the coarse lees. It was then racked into stainless steel tanks to ferment at a controlled temperature of between 14°C and 16°C. Once the first alcoholic fermentation was complete, the wines underwent malolactic fermentation. A blend was made of reserve base wines from different vintages to achieve a style that is consistent over time. The second fermentation then took place in the bottle using the traditional method. This occurred in complete darkness at a temperature of 13°C to achieve good fermentation kinetics in order to produce very fine, persistent, and delicate bubbles. It was kept in contact with its lees for 30 months to achieve the style and quality of a great sparkling wine. Finally, the disgorgement took place, and then liqueur d’expédition was added to provide balance to the wine; this was calculated according to the levels of alcohol, pH, and total acidity.

Concentrated and complex flavours of sweet fresh berries, dried figs and prunes, roasted coffee and liquorice. Well balanced with good acidity which balances the ample body and alcohol. It finishes with good length and smooth, silky tannins. This is a big wine which maintains surprising elegance alongside its obvious charms.

Food Matching

This Zinfandel pairs particularly well with robust, heavy foods like rare prime rib, roasted pork tenderloin, and chili con carne. Also grilled lamb shank with grilled winter vegetables, pasta bolognaise, and blue cheese.

Vinification

The vineyards run adjacent to this road and consistently produce some of Cline's most complex, concentrated and unique lots of Zinfandel. Cline Cellars has chosen to dry-farm the ancient, head-pruned vines, a practice employed by the Italian and Portuguese immigrants who planted this vineyard well before the turn of the century. The Oakley terroir is characterized by the hot sun, sandy soil, and an unique band of air that flows from the Sacramento and San Joaquin Rivers, producing a stunning and concentrated Zinfandel. The grapes from the Live Oak Vineyard were harvested at high natural sugar levels and treated gently in the cellar to emphasize the explosive fruit characteristic of the block. The fruit was almost entirely de-stemmed and lightly crushed, with a large proportion of whole berries remaining in the must. Fermentation occurred at moderate temperatures in stainless steel tanks, using a selection of cultured yeasts. After eight days of gentle "pump-overs" and near dryness, they drained and pressed the wine from its skins. The Live Oak Zinfandel was minimally handled before being put down to barrel. The wine was aged for 15 months in 40% new, medium toasted, French oak barrels.

The grapes from old vines were taken to the winery in plastic boxes. On arrival in the winery they were rigorously inspected on a sorting table. The grapes with their stems were then slightly crushed and transferred to a traditional stone tank (“lagar”) where they were foot trodden. After this, the grape spirit was added to stop the fermentation and fortify the wine. Ageing 4 years in large oak vats (9000 litres). Bottled without fining or filtration; a light sediment may form in the bottle over time.

The Oakley terroir is characterized by the hot sun, sandy soil, and an unique band of air that flows from the Sacramento and San Joaquin Rivers, producing a stunning and concentrated Zinfandel. The grapes from the Live Oak Vineyard were harvested at high natural sugar levels and treated gently in the cellar to emphasize the explosive fruit characteristic of the block. The fruit was almost entirely de-stemmed and lightly crushed, with a large proportion of whole berries remaining in the must. Fermentation occurred at moderate temperatures in stainless steel tanks, using a selection of cultured yeasts. After eight days of gentle "pump-overs" and near dryness, they drained and pressed the wine from its skins. The Live Oak Zinfandel was minimally handled before being put down to barrel. The wine was aged for 15 months in 40% new, medium toasted, French oak barrels.

The wine is sourced from grapes equally shaped by the Pacific Ocean that grow in the Aconcagua region’s coastal Leyda Valley, grapes that achieve a pungency and aromatic profile redolent of New Zealand’s Marlborough region on the other side of the Pacific Rim. Bright, aromatic and crisply textural. The Myth of Motu Nui is a delightfully aromatic Sauvignon Blanc as rich as the myths that inspire the name.

Simple fish cooked over coals with lemon or a goats cheese salad.

Vinification

The Sauvignon Blanc grapes are grown in three excellent sites across the Leyda and San Antonio D.O. The proximity of the vineyards to the Pacific Ocean (only 10km’s away) and its fresh coastal breezes ensures grapes ripen slowly. This allows the grapes to retain their natural citrus flavours and freshness but also to develop great aromatics. Sauvignon Blanc grapes in Leyda are some of the first to be harvested in Chile, and winemaking is simple to preserve this crunchy, bright fruit. Cool fermentation in stainless steel is followed by a couple of months on their fine lees which adds texture and depth. We bottle early to retain the primary characters, flavours and freshness of this enchanting fruit.

Vinified in stainless steel, with a short maceration of one week. Alex Favier then puts the final blend together.

With manual harvesting and gentle pressing, the utmost care and attention is taken in producing this wine, from the vineyards right up to the cellars. Only the first presses of the best batches are retained for this Cuvée Prestige. The wine is aged on racks for 24 to 36 months in our Burgundy cellars in order for the aromas to intensify. A sugar dosage of 10 gr/l is added to the blend in order to preserve its remarkable expression.

From a 12 hectare plot in the village of Bussières, to the south of the Mâconnais region, with an average vine age of about 40 years. Gently perfumed, ripe melon fruit and fresh citrus on the nose. The palate is ripe but retains excellent freshness, balanced by a touch of white pepper spice that is very typical of its grape variety. Deliciously long, the finish shows bright fruit and a clean, saline/mineral edge.

Picpoul vines grow just inland from the Étang de Thau, home to southern Languedoc's famous oyster and mussel beds. Along the coast you'll find cabins where locals gather to feast on mussels or 'huitres braisees' (oysters cooked over a fire pit) which are perfect with a glass of Picpoul de Pinet.

Vinification

Cave de l'Ormarine's vineyards lie at approximately 40 metres above sea level on a chalky clay plateau, rich in Cretaceous limestone and quartz. The vineyards lie to the North of the Lac de Thau and slope towards it. Ormarine's head winemaker Cyril Payon makes this Duc de Morny cuvée with a premium selection of grapes from 15+ year old vines, harvested at night to retain their aromatic freshness. They are de-stemmed and macerated on their skins followed by a fifteen-day fermentation without malolactic fermentation.

Vinification

Lightly crushed and pumped straight to press, where it is gently pressed and the juice is taken to the tank. The juice then cold settled for 24 hours. The juice is then racked off the heavy lees and moved to another tank where it is warmed and fermented under temperature control. After finishing ferment the wine sits on its lees for a period of time. A proportion of the blend is also fermented in old barrels. This wine was held in fermentor for 4 months post-ferment, sitting on its gross lees. This was then fined, filtered, and bottled.

Cultivated Made from Pinot Grigio grapes grown in the Valle dei Laghi, a valley with a sub-Mediterranean climate and medium fertile, well-drained soils. Grape yield is medium low (70 hl/ha). The grapes are softly pressed and fermented in stainless steel and a controlled temperature of 20 degrees Centigrade. The wine is matured in stainless steel tanks for 4 months before bottling. Vinification is carried out off the skins and the must is obtained from a soft crushing of the whole bunches, to prevent the pink colour of the skins from being extracted. Selected yeast and a controlled temperature of 20 degrees C are used to aid fermentation. The Ancient Vines Mourvèdre draws from some of our oldest, most historic and shyest-bearing vineyards. These blocks produce fruit of stunning concentration as a result of sensitive farming practices, the singular Oakley terroir, and an unique cooling band of air that flows in from the San Joaquin and Sacramento Rivers. By naturally restricting yields to only 2 to 3 tonnes per acre, we achieve a sublime expression of the Mourvèdre fruit. These grapes hold characteristics of dark, dusty berry fruit that makes their Ancient Vines Mourvèdre so lustrous. Individual lots of grapes were harvested separately according to ripeness and balance of acidity. Grapes undergo total de-stemming and a very gentle crushing to ensure a large proportion of whole berries in the must. Fermentation occurred in stainless steel tanks with select cultured yeasts. It was then maintained at the ideal temperature to aid in the extraction of flavor and colour. The wine was pressed off its skins at dryness before being racked to dark toasted American Oak (approximately 30% new) where it was gently aged for 10 months and then stored in neutral cooperage.

A warm, inviting, richly fruity nose, with aromas of fresh morello cherry, ripe plum and hints of dried fruits. The palate is similarly full-flavoured with concentrated, crunchy black cherry, brown spice and vanilla notes and a hint of liquorice. The long finish has the classic bitter cherry fruit finish typical of ripasso.

Food Matching

Try with lamb shank, calf's liver or a mushroom pasta dish. Hard cheeses would also suit.

Vinification

The grapes are cultivated on traditional trellised vines planted in marl soil at Montresor's 'Capitel della Crosara' vineyard on the hills of Negrar within the Classico zone. Grapes are picked by hand in October. Made by the Ripasso (literally 'repassed') method, which involves adding the unpressed skins from the dried grapes which were used to make an Amarone to a young Valpolicella wine. This helps to add extra flavour and alcohol to the wine (causing it to start re-fermenting) and gradually the luscious flavours of Amarone are imparted to the wine. After this the wine is aged for 12 months in French and American oak casks along with some small barriques.

Vinification

Optimal ripe grapes are essential for a good Pinot Noir. The full aromatic potential has already been developed, but the sugar content should be relatively low in order to preserve the variety's elegant style. For that, a part of the crop is harvested quite early and ferments at low temperatures exalting fruity aromas. The other part, fully ripe, undergoes a traditional, long maceration. About one-third ages in French oak barrels for several months adding complexity to the wine.

This wine is made from Koshu, Japan’s indigenous wine grape which can be traced back to 1186 when it was discovered growing wild at Katsunama in Yamanashi prefecture. Koshu grapes are grown in the Iwasake District of the Yamanashi Prefecture where the soil, gravel, and clay with good drainage. Harvest took place from late September to early October. Fermentation in oak barrel at 18-21℃ for approximately 14 days, the wine was aged for 4 months in oak barrel.

Vinification

Common practice in the Côtes du Rhône is to bottle the best cuvées as a single, named, village wine and the rest as more basic Côtes du Rhône Villages. Boutinot’s philosophy, on the other hand, is to start with the intention of making the very best Côtes du Rhône Villages possible by sourcing wine from the vineyards of named villages, and enriching them with a small proportion of barrel-aged wine from Sablet and Séguret. Boutinot's Côtes du Rhône Villages 'Les Coteaux' is therefore a selection of the best Grenache Noir and Syrah from some of the 17 named Côtes du Rhône Villages. We source wine from a number of growers with exceptional terroir and so have the flexibility to select only the very best fruit for each vintage (rejecting parcels that do not meet our high standards). Mostly unoaked, a small proportion (15%) is part-aged for up to 20 months in a few new, but mostly older, oak barrels to bring depth and subtle notes of complexity.

On the various soils of this Mistral buffeted hill are to be found the majority of Domaine Boutinot’s vineyards with La Pauline and Les Six Terrasses, two of the appellation’s best plots, nudging the summit. Both are broad terraces of ‘argilo-calcaire’ - heat-retaining limestone pebbles over water-retentive clay. The pebbles help maintain diurnal temperature variances and aid ripening, while the roots find water in the clay to sustain the vines during the summer growing season. As with all Domaine Boutinot’s plots, they are managed by minimal intervention and both vineyards benefit from the all-day sun and the cleansing Mistral winds. Planted mostly in 1969, the old bush vine Grenache Noir ripens slowly and evenly to produce low yields of deeply concentrated grapes, all harvested by hand into small baskets and destined to form a significant part of the blend of La Côte Sauvage. A warm, inviting, richly fruity nose, with aromas of fresh morello cherry, ripe plum and hints of dried fruits. The palate is similarly full-flavoured with concentrated, crunchy black cherry, brown spice and vanilla notes and a hint of liquorice. The long finish has the classic bitter cherry fruit finish typical of ripasso.

Food Matching

Try with lamb shank, calf's liver or a mushroom pasta dish. Hard cheeses would also suit.

The grapes are cultivated on traditional trellised vines planted in marl soil at Montresor's 'Capitel della Crosara' vineyard on the hills of Negrar within the Classico zone. Vinification

Grapes are hand-harvested from an old block on the Binder family Barossa vineyards. Small batches of Chardonnay are picked and pressed through a tank press with some skin contact. 25% is fermented in French puncheons and American hogsheads for 6 months, aged on lees then blended with the 75% unoaked juice, settled, and bottled. Into the main Barossa blend a small component of Eden Valley Chardonnay is blended and the whole sees a tiny bit of secondary use oak for some fine structure.

The vines are cultivated using the double-arched Guyot system, with 4600 vines per hectare. Harvest yields around 95 quintals per hectare from 15-year-old vines. Following careful vinification, the wine is aged for four months in stainless steel tanks. This meticulous process results in a wine that captures the essence of its terroir, showcasing the unique characteristics of the aromatic traminer grape.

Superb Shiraz smells invitingly of juicy ripe blackberries and black cherries, with slightly resinous, spicy, incense notes, toasted oak, and raspberry jam. The tannins are beautifully rounded and velevety and there is fabulous freshness.

Vinification

10% of the must was held cold prior to inoculation to encourage aromatic intensity. Wine was fermented at around 24C in stainless steel tanks and matured in a combination of old and new, small and large, English and French oak. One third of the wine was matured in 140 year old 5000L English oak casks.

Month 5 –

A mixture of wines for this month's box, a lot of Europe and a little hello from Chile! An array of lovely summer vibes and something to go with grilled lamb or BBQ.  I visited the De Martino vineyards in Chile in February to see how the family have grown and adapted to produce a lower intervention style of wine. Gallardia comes from Muscat of Alexandria grapes grown in the Itata valley (5 hours south of Santiago) that's really far south for growing grapes! Hand harvested then a spontaneous fermentation, for wild yeasts, French oak for softness and then lees ageing for depth curates a wine that is superbly match with bright summer salads or oily fish dishes. You’ll be able to add favourites into you “cellar” now as well so you can remember the wines enjoyed the most.

The flavour profile of this sits somewhere in between the Chablis and Petit Chablis from Domaine de la Motte. It has a restrained savoury, citrus and herbal nose followed by greater intensity on the palate. Cooked lemons, green apples and a stoney minerality are complemented by a nice citrus acidity to the end with a lovely clean finish.

Anything that calls for a clean, crisp Chablis.

Vinification

Grown on Kimmeridgian soils, on south and south-eastern facing slopes in the commune of Beine. This 1.5 hectare plot of vines with an average age of 40 years old only produces about 9000 bottles per year. After traditional vinification and fermentation at 18 degrees, the wine is aged for 9 months with 66% in steel tanks and 33% in 600l oak vessels.

Vinification

100% Tinta del Pais (Tempranillo) grapes are selected from a number of different plots near Fuentecén, at 900m altitude. Soils here are a combination of stone, clay and white limestone and vines are over 25 years in age. A first selection of grapes takes place in the vineyard, where those from the highest and coolest areas are chosen, which have experienced a slower and smoother ripening of the berries. A pre-fermentation maceration of the grapes takes place at 10ºC for 3 days, followed by alcoholic fermentation over 18 days at 22-26ºC - with pumping over and daily pumping-down. Malolactic fermentation takes place in batches, both in tank at the start of fermentation and also in barrel at its end. The wine matures for 12 months in oak barrels - 70% French (with different levels of toast) and 30% American. Between 25-30% of the barrels are new, with the rest coming from 2nd, 3rd and 4th use oak.

Great wine to pair with sweet and savory sauces on grilled meats, also pairs well with dishes featuring tomato sauce such as pizza, and pasta with Bolognese.

Vinification

Grapes are harvested by hand and 6 months in French oak and 8 months in bottle.

Well, maybe I spoke too soon about ‘summer’ wines! Hopefully we do better in July! I’m starting with a rosé to try and manifest some sun and Chateau Leoube, Provence, France produces some of the best. The wine maker, Romaine Ott has been making wine of this crisp clean style for years. Soft strawberries, bit of pear and a lovely acidity. Hand harvested, direct pressing, natural yeasts along with the organic growing, make this a real winner for me!You’ll be able to add favourites into you “cellar” now as well so you can remember the wines enjoyed the most.

Vinification

The grapes are harvested late, around the middle of October to capture the benefits of extended hangtime. After destalking and gentle crushing, the wine is macerated with partial skin contact. Fermentation is carried out in 75hl French oak vats at a temperature of around 16C. The wine is kept in the same vats after fermentation for six months of maturation on the fine lees. The wine is kept in the winery for three months of further aging after bottling.

Plumbago – named after the beautiful purple wild flower that grows in the woods surrounding the farmhouse and vineyards of Ulmo – is a single-variety Nero d’Avola. It is produced from the old vineyard at Lake Arancio which gives us this soft fruity version of this great Sicilian grape variety. Rounded tannins and perfectly judged wood makes it an immediately pleasurable wine. Ideal for Mediterranean cooking based on vegetables and all types of meat. Vinification: "Vinification: after destalking and pressing, the grapes ferment in stainless steel vats and remain on the skins for 14 days at 25⁰C with repeated mixing; at the end of the period racking by soft pressing. The wine thus obtained undergoes malolactic fermentation in stainless steel, in January it is transferred to wooden barrels for 10 months. Maturation: barriques and tonneaux used 3 and 4 times. "

Vinification

An unusual blend of Viognier (30%), Picpoul Blanc (30%) and Grenache Blanc (40%). Sourced from clay limestone soils in Richerenes in the Vaucluse for the Grenache Blanc and Picpoul, with the Viognier sourced in the Northern Rhône (so the wine is classified as Vin de France). Vinified in stainless steel, with a short maceration of one week. Alex Favier then puts the final blend together.

Winemaking is both an art and a science, and Bogle winemakers have again hand-crafted a perfectly balanced, easy-to-drink Chardonnay. Using the techniques of barrel fermentation, surlies aging and partial malolactic fermentation, winemakers have layered flavour upon flavour, creating a complex wine with generous character. Fermentation takes place in 50% new American oak and also has sur-lies ageing. Once fermentation is complete the wine spends a further 9 months in new American oak.

Gentle pumping over occurs during fermentation in stainless steel followed by malolactic fermentation. 50% of the wine spends 9 months in French oak while the other 50% is aged in American oak for 11 months before blending and bottling.

Vinification

Grapes are sorted after picking, alcoholic fermentation, and maceration (3 to 4 weeks in total) in temperature-controlled stainless vats, 12 to 18 months ageing in French oak barrels (30 % new oak barrels).
