Tasting Notes

Barsac is one of the great French dessert wines and this fine example is wonderfully honeyed and perfumed with candied fruit, apricot, and hints of vanilla.

Food Matching: Perfect with puddings, blue cheeses, foie gras, cheesecake or sorbet.

Bottle Information

Vineyard: Harvesting at Climens is extremely delicate. An experienced team sorts out and gathers only the grapes affected by the famous Botrytis Cinerea, the noble rotting. Wine processing is done in barrels in order to intensify each batch’s complexity and balance before proceeding to a very meticulous combination. Maturing goes on for 18 months in barrels renewed by 35 to 60% each vintage.

Vinification: After manual harvesting, the grapes from different parcels are vinified separately. Pumping over and maceration depend on the tasting of each tank. Blending is done at the end of winter. Then the wine is matured in oak barrels and bottled after 10 to 12 months.

Awards and Press News: 90/100 - The 2014 Cyprès de Climens has a more resinous, almost Germanic bouquet compared to its peers, with touches of smoke and nutmeg filtered through the honeyed fruit. The palate is rich and viscous on the entry, a keen thread of acidity, lightly spiced with quite a persistent finish. Always one of the finest deuixème vin from Barsac, this is no different. Drink 2018-2030. Neal Martin - Vinous.com, March 2018 17/20 - Tasted blind. Rich and broad. Pungent and exciting. Positively burnished. Surely wrongly promoted as an aperitif wine. Drink 2017-2030.
