The second time we’ve bottled a Caol Ila, one of the most versatile and easy to please distillates in our opinion. Suits so many cask styles, can take a load of wood or we could even drink it straight off the still. We prefer our Caol Ila fairly fresh to preserve that bright peat profile, bottled a couple of months away from its 14th birthday from a single refill butt.

Why we bottled this – Wonderfully oxidised, superb balance, thoroughly elegant Islay loveliness, just what we want from a peaty maritime dram, the label – The last Caol Ila we had a lobster painting, we wanted to continue that maritime, briny, umami thing and couldn’t find a pretty enough picture of a sea urchin that worked, so here’s a rather fetching hand coloured etching of kelp, a crab and cheeky wee prawn by J. F. Schreiber from 1876."
