Tasting Notes

With a delicate straw colour and aromas of strawberries and apples with subtle savoury notes, this sparkling is light and fresh with a fine bead and yeasty complexity.

Vinification

Fermented at around 15C in stainless steel using DV10 and EC1118 yeast. These yeast are specifically used for the production of sparkling wines. They are clean, strong, and neutral fermenters that do not create unwanted fruity ester aromas in this wine style. DV10 used in the primary ferment and EC1118 used for the secondary ferment is where the bubbles come from.
