Cask #805561 delivers a beautifully balanced combination of ripe apricots, honeycomb, baked apples and warming spices, with rich caramel, mocha and glazed cherries adding further depth.

GlenAllachie 2012 Sauternes Cask Tasting Notes

Colour: Golden mahogany.

Nose: Ripe apricots, golden honeycomb and crisp green apples, followed by warming baking spices, golden syrup and delicate white grapes. Beautifully fruity, with a lovely honeyed sweetness.

Palate: Baked apples, cinnamon and heather honey lead the way, followed by rich mocha, glazed cherries and juicy poached pears. Layers of warming baking spices and caramel bring a deliciously indulgent sweetness.

Sauternes is a celebrated sweet wine from Bordeaux, France, known for its luscious honeyed character and flavours of ripe stone fruits, orchard fruits and citrus.

Its influence on Scotch whisky can be rather special, adding sweetness, fruitiness and complexity to the underlying malt character.

This GlenAllachie 2012 release is a fantastic example, combining those classic Sauternes-inspired flavours with the distillery's rich Speyside character.
