Tasting Note: Sun-dried apricot, marzipan and rose petal aromas, with rosemary undertones. This wine is big with some prominent leesy, toasty notes among the fruit. The finish is clean, fresh and minerally and very long.
Food Matching: A perfect accompaniment with buttery fish dishes, bouillabaisse and mildly spicy dishes.
Vinification: The grapes are de-stalked, crushed, pressed, settled and then fermented in 2nd/3rd fill barrels french oak barrels. Fermentation is controlled at 15-16 degrees.
