Tasting Notes
Not just a grassy, acidic dry white but a round, lush wine with depth of fruit fantastic concentration, and superb balance which make it an ideal sauvignon blanc. Starting with an aromatic flowery/fruity bouquet and finishing with clean, crisp citrus style fruit, great length, and limestone/minerally tones.
Food Matching: The Pouilly Fume acute; Château Favray goes particularly well with shellfish, grilled and smoked fish, white meats, asparagus, and cheese, notably goat cheese.
Unique Selling Point: Château Favray was distinguished by Françoise de la Rivière, lady-in-waiting of Queen Margot, the wife of Henri IV. It is often maintained that the world’s most delectable Sauvignon Blanc comes from Pouilly Fumé. Favray's liveliness is fused with ripe citrus fruits and remarkable elegance.
Bottle Information
Vineyard: It is no accident that the best Sauvignon wines come from the Pouilly Sur Loire region! The Sauvignon Blanc grape variety finds a climatic balance in these terroirs bringing it to sublime expression. Too much heat burns the Sauvignon grape and its aromas become neutral. Without enough sun, ripeness is not reached and vegetal tones jarringly dominate. Pouilly’s continental climate is sufficiently cool and yet temperate thanks to the warmth of the Loire River bringing roundness and richness. Nature’s subtle delicateness has no equal anywhere else. Vines are planted at an altitude of 190m a.s.l on limestone calcareous soil. The age of vines is 20 years and they are trained with the simple Guyot system.
Vinification: Vinification is in stainless steel with controlled temperature. Traditionally the wine does not make any malolactic fermentation. Bottling only starts in July following the harvest.
